Egg White Bites


The other day I was out and about and didn't have food packed. I went to the grocery store and got an egg white bite from the section with eggs, and an instant oatmeal cup from the hot cereal section. I paid for it at the coffee station where they filled the oatmeal cup with hot water for me.

I looked at the ingredients and thought maybe I could make those egg white bites!

So, I did. The recipe:

I blended the ingredients lightly in the blender, except the last three. I poured it in the muffin cups, then added a little of the last 3 ingredients to each muffin. I baked them for about 20 minutes at 300 degrees F.


Some muffin pans have a great non stick surface and others required the little cupcake liners.

They are a little small per serving, but  you can have as many you need for a meal or just a snack.
