Turkey Rice Stuffed Peppers and update

Today I made these stuffed bell peppers. They turned out amazing, here is the recipe, macros, etc

I've been holding myself accountable, even when I have very rough days:

OMG that peak in calories a few days ago! It's so hard to convince yourself to keep going when that happens. But we can do it. Just keep swimming.

I've found that when we feel really crappy, physically or emotionally, it's easy to let those peaks happen. The best thing to do is figure out how to prevent ourselves from feeling so crappy, or to make sure we have an environment setup so that we don't have the temptations around. These are hard problems to solve, and hard choices to make.

After all the food prep today, I went for a run. It was so beautiful outside, even if cool and brisk. It felt great.

There's a view along this route.

This was the turn around point.

It's 9:45 PM as I'm writing this and I'm feeling hungry! I think running really does create a big calorie burn, but I'm going to remind myself I can go to sleep a little hungry and it will all be okay. I'll wake up feeling just fine tomorrow morning.

When I got home from my run ...

My neighbor had left me fresh eggs from her hens. And a little gift card for when I took care of their place and pets while they were gone. It's nice to have good neighbors!!!

Finally...

I took a couple pictures of our precious little Niblett kitten.

I hope everyone is doing great!

Life is hard. Keep going anyway!

  1. I am grateful that I can read your post. Love all the pictures while you 🏃‍♀️ run. Cool and brisk weather is one of my favorites. Magnificent views!

The eggs look beyond price. I agree. It's so nice to have a good neighbor. You are the good neighbor.

Niblett looks he knows well he's loved. 😻😽

Thank you all the time for being here for us. You are a lamp and compass in this rough journey.

    Have a blessed week!
